No experience with wheat but I have used rye before in the pic acres year, or what ever it was called. Rye needs to be vernalized which I think winter wheat would be very similar to when compared. The rye when seeded in July was decent cover but paled in comparison to fall seeded. It made a short, stooled out version of itself which looked as if it were infected with a rust of some sort. An occasional tall stalk would crop up with a seed head but the seed didn't look viable. When fall came on, it perked up. It overwintered much as it would if seeded in Sept or Oct and did not die but started the cycle much as if it had been seeded at the correct time. The next spring it was green and lush as normal.
