We make baleage out of mixes that include radish, turnip, and millet. The hay has a different smell to it, but never seems to bother the cows. Agree with Garvo, ask your cattle neighbors what they would buy. If you're wanting soil health, put out an 8-14 way mix and get the cattle on your fields. You can bales those mixes, but the cows bring stuff to your land you can't buy in a bag.
