Not much uhm, ....sccratch that,...... it has nothing to do with velocity, but has more to do with the change in pressure and it effecting the boiling points of the contained substance such as oxygen or LP.Both have a boiling point and designs can be used to change the physical state of the products nature at a given pressure to make it either evaporate or condense over and over in its cooling cycle when used as a refrigerant or/and/ it will cool or /absorb heat when it escapes a pressure vessel...
