you mention the jowels. when mom made pickled braines, the jowle meat was the first to come off the head when it was boiled. she then it ground up similar to sausage and mixed it with cooked corn meal and pressed it into a loaf. it was sliced and fried for breakfast, served with maple syrup. one more thing as the original poster talked about blood pudding and how it was made,i do not know the complete recipe as I was very young at the time, but I remember having to go to the barn where we mixed our animal feed and bringing back some wheat middlings to be used in the blood pudding.
