Bloot Wrust or Blood Sauage When we Butchered and Dad bleed the hog , my Mom ,with a big pan , would catch the blood. Had to keep stirring OR it would lump. Then with some hog meat and cook. Then it was put in cloth tubes and hung up to dry. Fried it for breakfast and VERY good. ( I think you would have to be raised on it ) to like it. Made lots of KNIP or Head Cheese. To save everything ,cook the head and the jowles were very greasy. As i grew older , we would pressure cook all bones to get all the meat off and then add more meat and we still buy it from a meat market VERY GOOD Glen
