I was born to German decendants that were born here and didnt learn english untill grade school started for them....,they were born of parents(naturalized citizens on one side) that made made headchese all their capable lives,as did my parents, and Ive eaten it all my life and NEVER heard of it called KNIP before.......I learned something new again!
Kopf Kase.........Schwaddenmagen......or... head chease......but never KNIP,
Knip sounds more like "docking tails" (: but you never know, the tails might just be in the head chese at some peoples places anyway.
Oh.... head chese was stuffed into the cleaned out and cleaned and cleaned and washed out and salted pig stomach....and cooked and lightly smoked.....they didnt waste much more than the squeel either.
My Norweigen neighbors made the blood sausage.
