You are fortunate to have several options. I have seen some really nice affordable and very durable counter tops made of porcelain floor tile and epoxy grout. You can also purchase small (12 X 12") pieces of granite to make a nice counter top.

I would suggest checking for nails and running your 8" boards through a planer. You can then run the boards through a table saw with a 60 or 80 tooth blade to trim and smooth the edges. I like your idea of installing biscuits before gluing these boards together. Immediately wiping the glue squeeze out with a paper towel will make sanding a lot easier. It should be fairly easy to then sand 2 or 3 seams for your counter top.
