The old timers 100 years ago didn't have a powered planer either. Used sharp hand planes. So yes it can be done with sander or hand planes. I find when gluing up multiple boards. To never do more than 2 or 3 at a time. Then let sit for a hour or two then come back and add more. More controlable. I also wait 20 minutes to half hour before I remove excess glue. Because now instead of smearing it into the wood pores. I can scrape it off fairly easily with putty knife or scraper. Good luck.
