Looking at average prices just gives you a historical baseline as a reference point, it doesn't really have anything to do with your cost of production. Cost of production comes into play when you plan which crops you are going to plant. But unless you decide to destroy the crop (and replant to some other crop), you're at the mercy of the market as far as price is concerned. Your goal is to sell your crop at the average price or higher (if the market determines that its willing to pay more). The market doesn't care what your cost of production is and it really doesn't matter to you either. You're just trying to extract the most you can get for that particular crop. Thats probably about as clear as mud.
