Not sure how to get rid of the hog taste, except get your supply from someplace else. I have bought pork chops from the local grocery store, and bigger grocery stores and there is that "piggy" taste and smell. But when I get chops from our local butcher that uses his own families hogs and steers there is no piggy taste at all. So maybe it is the breed of pig.
