I'll pass along something I heard about pork liver that I wonder might be worth a try. Note; I've never tried this myself so don't try it on 20 lbs. A friend told me his mother made the best fried pork liver ever, and her secret was soaking it in milk for an hour or so to get rid of the strong flavors. Again, never tried it so, no gaurantees. Joe
