I like your pasteurizer and as far as controlling it you could use some thing easier than the plc to run it I would turn to ebay and get a temp controller like a Temar 150. Wire to a relay in series with the pump and the indirect will cycle on and off with the pump.
I would sell the plc on ebay or keep it for another project.
