I think the wheat will be alright with those temperatures. A lot of high wind when it is cold without a snow cover can be real damaging to the wheat.
And old retired wheat farmer once told me, "a poor crop of winter wheat is better than a good crop of spring wheat."

If the wheat does not survive or has excessive winter kill, you can seed spring wheat over the top next spring.
