How about wraps made out of soft taco wraps?? We add sandwich meat to it, and it's very easy to eat one handed.
Strawberries are easy to eat one handed too, and are portable. Just wash them and leave the stems on for a "handle" to eat them with.
I like to stick in a pack of baby wipes for hand washing...pretty handy for clean up after a meal on the go as well!
