I don't like burgers too lean. Too much fat and it renders out when cooking. Too little and they can be hard as hockey pucks. Wife preference is 80/20 to cook easily and be tender.

Since we are low carb we do not add bread or crackers to meat loaf but instead use crushed pork rinds. Could add them to too dry hamburger.

Hamburger made from half beef and half pork also makes a more tender burger.

A really good hamburger steak I would just as soon have as a ribeye. About a 1 pound hamburger steak. My wife would much prefer the real steak.

Dry hockey puck hamburgers that are hard as a rock I don't care for. Usually means they either need more fat or are over cooked.
