Madison Co. Virginia | The only time I've tried convection, is when attempting to bake multiple trays of cookies at once. In theory, convection will bake two or three stacked trays as evenly as one, since it's moving the warm air across all of them. In reality, there were still some cookies on certain edges of the trays that got overdone. I tried rotating the trays halfway through baking, and was able to mostly correct for the issue, but it's still not perfect.
Different ovens have different quality convection systems, too. Fans inadequately sized, poor airflow characteristics inside the oven, etc. | |
