I wish Sharptails tasted like Ruffed Grouse! They're a lot easier to hunt, and more plentiful where I pheasant hunt at least than trying to hunt a meal of those little Ruffed grouse out of the woods! Ruffed are a delicacy for sure.

I've always put the grouse in with the pheasant legs when I get home from a hunting trip. They're not great eating to me, lower than a pheasant breast but equal to the darker leg meat I'd say. Dark, red breast meat usually.

I'm pretty sure smoking a Sharptail Grouse would turn it in to jerky, might be a good treat to go along with a few drinks but probably not a meal presentation.
