I don't know, never had one. Figured it to be like a pheasant. We don't have those birds in our neck of the woods, but neighbor goes out to a ranch every year about a 100 miles west from us and hunts them. He never tried to smoke one. I found a brine on line that I'm going to try. He wants to try it and said if it sucks, dog will have a snack. LOL
