Here is something we have for breakfast that does not have many carbs. Take a med. size zucchini squash and cut in 1/2 length wise and scoop out seed cavity. Brown some sausage in a skillet along with a few onions and peppers ( we use sweet peppers but you can use hot if you like ) . When the sausage is browned and the vegetables partially tender , add some cheese , we use shredded mozzarella but use whatever you like , and turn off the skillet , there is enough residual heat to melt the cheese. Stuff the seed cavity of the zucchini with the sausage mixture ,top with more cheese if you want and bake in oven till zucchini is tender usually about 15 minutes at 350 . We usually have scrambled eggs on the side
