Subject: skillet pizza

Pittsburg, Kansas

We like skillet pizza for a change of taste.

Basically brown and chopp hamburger in a frying pan. Cast iron works good. When it is 2/3-3/4 done top with whatever pizza toppings a person likes. If sticking with meat and cheese only can use pepperoni or other meat toppings and various shredded cheeses. We like a little onion but there are a lot of toppings that would constitute low carb like green peppers, mushrooms, various shredded cheeses, etc. Make it however you like as low carb as you like. A little tomato sauce but be careful on the sauce as if it is bought a lot have sugar in them. Make your own or read labels and choose a fairly "clean" one. If a person is trying to avoid vegetables though for allergy reasons can skip it and just use some dry spices or even nothing but salt. A person can make it as "clean" as he wants. The big thing is it has no bread crust, as that is where a lot of carbs come in. Pop it in the oven till the cheese is melted and the hamburger finishes cooking. Serve right in the pan with a hot pad on the table and a big serving spoon to spoon it out on the plates. We have some variation of it about once a week.

Another thing we like is meat soup. Wife will often grill or otherwise cook up more meat than we will consume at one meal. For example the other night we had two huge T-bone steaks a couple inches thick. We neither one could eat it all so what was left with the bone she chopped up in bite size chunks and along with the bone and some other bone broth she had made earlier made up some meat soup. If we have left over hamburger patties she might chunk them up and add them also. Maybe a little diced onion. But mostly just meat chunks and very rich bone broth. If you have some bones with marrow in the middle, yum. Serve with some pork rinds on the side for some crunch.

I never was a big mustard fan in the past. I would eat it if it were on a hamburger or hot dog, but would never reach for it and instead go for ketchup. Ketchup is full of sugar so once we went low carb cut it out. I have found now I really like mustard and often have a small amount of it with various meat cuts but especially hamburgers (without a bun of course).

One local restaurant has a couple of specialty hamburgers we really like. One is called "the birdy burger". We get a double (1/3# patties) without the bun so it eats like a hamburger steak. It has cheese between the two patties, topped with bacon and finally a fried egg on top (over easy or over medium or over hard, depending on what mood we are in). It comes with a slice of tomato, lettuce and onion which a person can either eat or just have them hold depending on wants. The other burger we really like is called "bacon and blue" which is the same without the egg but add bleu cheese topping. Something a little different but really good.
