Leesburg, Ohio | We sell based on hanging weight. We deliver live to the slaughter house. The buyer calls in their cut list, pays the processing when they pick it up from the slaughter house, and pays us direct for our price per pound for hanging weight.
In Ohio, to sell processed and packaged cuts direct from us to the consumer, we would need to be inspected by the state Dept of Ag. If we sell live animal and customer pays their own processing, that is considered custom slaughter, and we don't have to be inspected. The processor is, of course, state inspected, so we don't have to be.
Mitcho's post above is very good. It illustrates a typical scenario for us, also. The cutout percentages are typical. That would make our $3 hanging weight price equal to about $5/lb for cuts in the freezer. Yes, maybe a bit on the high side for burger, but way cheap for steaks, so it averages out to a reasonable price, and our customers seem to like it. | |
