Typically gardens and low maintenance don't go together. However, I have a flower garden that is mulched well with shredded bark that I grow tomatoes and peppers in. I just dig a hole and plant and they do great. Yes there are a few weeds that need to be pulled feom time to time, but not bad. I did plant a little field corn in a garden once as a backdrop. It looked nice; I'm sure you could plant a couple short rows of sweetcorn. The radishes and kohlrabi would probably grow well in a watering trough.
