People have been eating white flour for 5000 years. Why is it that just in the last 30 years has it become a problem?
I'm not belittling what you go through. I'm thoroughly curious.
Because it has become more and more refined in the last 150 years. White flour as we know it wasn't available until about 1870. I know that you probably realize this but if you go get some wheat out of the bin and grind it you have something considerably different than Pillsbury white flour today.
