My mother and grandmother always boil up a batch of cooked corn meal "mush" and then poured it into something like a loaf pan and let it completely cool. Then you take it out of the pan in one piece and slice it and fry it. Grandma used to dip her's in flour to get it to brown better. When we were kids we ate is for breakfast and put syrup on it, but my Dad always just used salt and pepper on his.
Now days, the in thing is to call it "Polenta" which is Italian for the same thing. The Italian eat it with main meals and use it as a substitute for pasta. They eat it soft, fried or grilled. Italians grow some corn in the NE part of Italy. Polenta is in Argentina too largely because a lot of ethic Italians have settled there.
You can buy "polenta" pre-cooked now in chub packs that you can slice and fry. Some of this stuff has some other favors and things added.
