Mom did the fried corn meal mush, sliced after sitting in the refrigerator overnight, also fried cooked rice and fried left over mashed potatoe patties. We eat a lot of what we call zucchini fritters in the summer. Chop zucchini, onion, and bell peppers, add an egg and a little milk, mix well, add 1/2 as much flour as cornmeal needed, flour first and coat, then the cornmeal. Add some butter to cast iron pan and drop mixture in by spoonfuls. Fry until golden brown, turn and mash down to make "pancakes". Sprinkle on a little sea salt. Goes very well with an ear of corn and big slices of red ripe garden tomatoes. Mom also baked extra potatoes, sliced them with a little ham and some onions and fry for breakfast....James
