You've kinda described what we enjoy as "Scrapple" or "Panhaas" (sounds like pawn hoss). White corn meal mixture with meat scraps set in a loaf pan, sliced and fried. Best cooked on a non-stick griddle without oil. We use sausage these days. You can google it or I have a recipe.
