Pittsburg, Kansas | I remember walking through the meat markets back in the day when we used to travel through the Yucatan and southern Mexico. Meat hanging in open air, butchered fresh that morning. Anything you wanted right down to chicken feet, organs you didn't know existed or dried fish from the coast.
I bet some of it was more than 5 hours without being refrigerated. Unless you got there really, really early.
