Here in Eastern NC we make it with vinegar, cayanne pepper, (flakes or whole pepper), 1/2 stick butter, little salt, boil, then ready, western NC uses different style and South Carolina has a mustard base sauce
The eastern NC bbq is always considered pork only, served already mixed into the pork, chopped or pulled, unless you are cooking the whole pig
