If it looks good it isn't ripe yet.  Never pick one off the tree to eat.  Always let them fall to the ground first. You'll have trouble beating the wildlife to them.


Best use is make into pudding.

You can process them by rubbing through a colander but I recommend one of these, (edit) a Foley Food Mill:
