I've used a Gatorade cooler for this stuff. The big style that football players dump over coaches heads. Mostly kraut but its the same. I had an old microwave that we were throwing out and the glass turntable fits inside the cooler perfectly to weight it down. The coolers are food grade so they're safe and pretty easy to find at garage sales and such.
