Subject: When to plant winter wheat to graze?

I am in north central south dakota and am wanting to plant winter wheat this fall and graze and then still be able to combine it next spring? When will the rough time frame it will need to be planted. I am thinking a shorter day winter wheat now so i dont know if that will affect my plant date this fall for how fast it may grow? Everyone is saying to plant it at 100 pounds to the acre but if we are going to graze it should we plant it a little thicker to some of it probably getting injured and not coming back next spring?
