Keep it grazed down in the fall. The bigger it is the more likely you are to have it winter kill or try to joint Early and get fried down.
Make sure you plant something known to be dual purpose, some varieties of wheat don’t respond well to grazing.

Nitrogen is your friend. It’s got to find 1 unit for every day of grazing if your stocking 1:1.
