I like bacon, but not on my steak. I have never done it on a pellet grill, but I have had it. Be careful not to overcook. I would let it sit out for 3 hours and then get internal temp to 100 and then rest. Buddy of mine did one to 120 internal and after resting it was almost 130 and was pretty much medium/medium well. My personal opinion is pellet grills are best for slow and low which is generally not the best way to cook a steak.
