| Way back in the day 30 years ago (yikes) in meat science class in college I was told the packer would sell the carcass or the boxed beef for the same dollar amount they paid for the live animal. Their cost to run the plant and profit came from the value of the hide and offal, so yes the packer is pretty efficient in running the plant. Obviously today the packer is making very good money on the beef alone plus they have hide and offal also. | |
