Gas will give you better / quicker control of temp. I grew up with electric ranges but wife grew up with gas. Have had dual fuel in the past, gas stove top & electric convection oven. When we remodeled the kitchen went with a separate gas stove top & double electric convection ovens. With our electric convection you can either bake like a normall oven or as convection.
