Southwestern Minnesota | I've frozen green beans for many years and like them best that way. Don't use beans that are too mature. I do small batches- about six cups at a time. I blanch them for 2 1/2 minutes. (Bring the water to a boil, put them in and start timing). Drain them and immediately put into ice cold water. Let cool for five minutes or until they are cold all the way through. Drain in a colander. Put into a freezer bag and put in the freezer. Don't do big batches and don't let them sit too long in the water and they won't get mushy. When you reheat them, bring the water to a boil, put in the frozen vegetable and return to a low boil. Boil about 3-5 minutes and then drain and eat. That's my method! | |
