W Texas | Sorgo/sudan, regular sudangrass and pearl millet are good options. There are several other millets, as well.
Pearl Millet could give you two cuttings, then back to wheat. It regrows very quickly if you cut it at 8" tall and it has groceries and moisture.
Sorgo/sudan a bit more risky as it is harder to dry down, but it yields more in a one cut scenario. It can be planted a bit deeper, which might help in establishment if you are no-till behind wheat and have a lot of residue. Millet needs to be shallow.
