My dad talks about his mom going out in the ice house in the morning to cut meat off of a swinging beef. Said it wasn't uncommon to trim the green off the outside. Said the meat was the best. I guess dry aged. Said they ate a lot of canned meat and fresh chickens in summertime. We all know what we would do with meat today that had a little green on it
