We need to do away with the usda (their safety cloak) and invent a safer, more honest meat inspection from the local level.
This is the main problem. Safety is being used as a weapon. The packer makes more profit in the time it takes to process a steer then both the feeder and
cow man put together who raised the animal for over a year. No one can afford to have a meat processing license unless they are killing at least hundreds but more likely thousands of animals a day and that is how these processing plants want it.
