Makes a great thick and rich potato soup. Takes a lot of stirring and we precook the potatos to help get them cooked all the way through without scorching the milk.
> 12 slices bacon
> 2/3 c margarine
> 2/3 c all purpose flour
> 7 c milk
> 4 large potatoes,peeled,cubed
> 1 1/4 c shredded cheddar cheese
> 1 c sour cream
> 1 tsp salt
> 1 tsp ground pepper
> Cook bacon untill browned. Drain,crumble and set aside.
> In large pan melt margarine. Whisk in flour until smooth. Gradully stir
> in milk,whisking until thinkened. Stir in potatoes. Bring to a boil,
> stirring frequently. Reduce heat-simmer 10 minutes. Mix in
> bacon,cheese,sour cream,salt and pepper. Continue cooking, stirring
> frequently untill cheese is melted.
