South eastern South Dakota | Be sure to get the heart too, I put the heart in a crock pot and cook it all day long to be tender. First I put pepper into the heart chambers and then cover the heart with pepper liberally, put about 1 inch of water in the crock pot and put the lid on and that is it. In the evening just remove the heart from crock pot and slice and eat, ketchup, mustard or whatever you want on it. I like to slice it into razor thin slices so the cooked pepper gets mixed throughout then I make sandwiches with some mayo, spicy mustard, horseradish, and a dab of ketchup. Always sad when it is gone. I cook the tongue the same way but the tongue must be skinned after it comes out of the crock pot. |
