Where the welds will be is there a way to clamp some aluminum or copper chilling blocks on the back side? When welding stainless steel it gets hot enough that it can get oxygen out of the air into the backside of the weld and those oxides allow it to rust. In food grade type stainless welding they use argon to purge the backside of the weld to keep oxygen out, using non mild steel chill blocks will do the same thing to a lesser extent.
