If you get along with your extended family and they live close. Have a big meal and send some home with them. If not, invite some good friends/neighbors. Plan C, make it, cut enough off for another few meals and freeze it. Scalloped potatoes and ham are always great here for one of the other meals with ham. We don't like eating on something for more than a weeks worth of meals. We have to change it up some.
