I opened up and ate a pint jar of canned elk a month or so ago. It was one my daughter shot and we canned in 2004! I'm still kicking! My wife canned some chicken 30 years ago and we took it along with us on vacation that year to have for evening meals at campgrounds we stayed at. She boiled it first, bone in, and it tasted good just kind of messy.
We have found very reasonably priced chicken breasts at a nearby Amish bulk foods store and had considered canning some of that but never got around to it. I think that would be the way I would do it or if we had a bunch of home raised chickens to butcher.
