Cottage cheese is a great protein source that is low in carbohydrates. 25g of protein and 8 g of carbs per cup.
Also you could do as many vegetables as you can handle. Soup or stews can be keep warm with a thermos pretty easily. Or get creative with what you stick into it the thermos.
