Without seeing it, I am wondering if it was a slice off the loin. If prepared with a sous vide precision cooker, you can control the "doneness" and keep the pork juicy. After cooking sous vide, it is often finished by searing in a pan or on a grill. Also, the food can be seasoned or prepared with a rub prior to placing in the bag to cook sous vide.
