It's a good idea to set up a "customer" named Cash Sale to use as a catch-all customer ID for invoices, cash sales receipts, etc. Then whenever you enter a transaction for someone you think may be a one-time customer, select Cash Sale in the Customer field. And, enter the customer's actual name in the Memo field of the transaction. (Then if you ever need to find the transaction based on the customer's name, you can use QuickBooks' Find feature to search for the customer's name in the Memo field of your transactions.)
