Little River, TX
Hesston wins hands down, for consistant and uniform bales.

There is not much difference between JD & NH balers. Go with the better local dealer there.
That said I run a NH 315 keep it in the barn and pull the hay out of the chamber when baling for the day to avoid rust.
If you are thinking of a hay preservative the NH then. The NH needs 2 spray nozzles while the JD needs 3.
Personal preference is I do not like the central greasing system for the JD twisters. Knotters may be different.

Used baler first look for rust in the bale chamber. Then pull the plunger out and inspect and replace all rails and bearings as required.
Read the owners manual, and get someone who knows their stuff to show you how to set up the tying system. Keep the knives sharp. Sharpen the knives with a corse and fine file not a grinding wheel for keeping the edge better.

Good baling starts with the raking. As a neighbors wife says any idiot can wad hay as long as they have good windrows.

An on the go moisture tester is real handy. A nice hand held humidity detector is a good too, also.

Some good how to references are:

This one talks roundbales but it does have good information: http://www.ext.vt.edu/pubs/ageng/442-454/442-454.pdf
