Subject: Wheat and snow...two questions

1. If a wheat head does not want temperatures at/below freezing, how exactly can one say that a wheat head is "insulated" from cold by a substance (i.e. snow) whose temperatures is at/below freezing?

2. Is wheat that has been flattened by the big snow going to raise up again? I have never raised wheat but I have raised oats...and I know any oats that I ever raised never raised up again after they were flattened (by high winds obviously, not heavy snow)

Thanks!!!
