An old neighbour told me the best time to prune any tree is when the saw is sharp and you have the time.
He was great about pruning in his woodlot for clear lumber logs.

You are not worrying about apple production so do it whenever you can.

Orchards are done now and I think there is something about pruning too early in the winter being harder because the tree is dormant too long and the cut will dry out before the tree gets a chance to heal it.
In the growing season it causes the tree to lose resources because everything is working to grow but a tree in a fence line is fair game anytime I can do it.

I was going to say that but you beat me to it. My Dad always said Prune when the knife is sharp - meaning when you had the time. I'm sure some times are better than others.
